What paperwork to take

originals, not copies of all ships papers and certificates: registration, insurance, radio licences, any CEVNI, ICC or other qualifications, bill of sale or other proof of VAT status, passports, preprepared crew list may save time, you may not be asked for any of it but folk have ben fined for not having it or just copies, some local variation, e.g. the dutch require their almanac even though it is in dutch!, no doubt others will come up with something I have forgetten, a filled out log book lets officials see where you have been and that you are bona fide
 
As well as all the above...........Red diesel receipts and RYA letter explaining UK red diesel is duty paid
 
Proof of VAT?? never, ever been asked to proove it. Has anybody been asked for this, not second hand info, but actually been asked to proove your VAT status by another state. I've been out of the UK for 2 years now and havn't met anybody thats been asked for it. Never beens asked for the radio licences either, or any qualifications for sailing my boat.

I'm not saying you don't need to carry these (we do carry them all, just in case), but I have never been asked for anything other than registration, insurance and passports.

Do keep a number of copies of all the paperwork, keep a complete set or two with a reliable person who is land based and, who will at the drop of a hat get them Fedex'd out to you ASAP should you ever need them.
