UPDATE:
Francisco very Kindly arranged for us to test his friend's Levant 560 Seapro. It has an 80HP Yamaha on the back. Pops onto the plane very easily and less noisy than I anticipated. The hull is extremely stable and performed really well today through very choppy water. Feels like a very safe little boat - was also surprisingly dry considering the conditions.
Thanks to @longjohnsilver we have decided to go for a bigger outboard. We have now settled on a Honda 100HP.
