It says maximum bends 270 degrees but . . .

If you install the heater in the preferred orientation then the exhaust exits pointing straight down, so start with a 90 degree bend to bring it to horizontal.

Then take into account the fact that the gooseneck on exit through the transom will involvee a minimum 90 degree bend.

That only leaves 90 degrees for all the other bendings that might be necessary to get from the heater to the bottom of the gooseneck.

How critical is this ?

Depends on a number of factors, length of exhaust, whether (and which) silencer etc, though if you keep the bends long and smooth then 270 should be more than enough and if you go a little over, that's a little over not a lot over it's not a real issue.
 
Blimey, really!! Is that 270 per bend or total for all bends as Webbie seems to be suggesting?

My Mikuni has a total of over 660 degrees between unit and skin fitting. . . It has been in use for 18 yrs like that, so I guess it's proven not to be an issue.
