Father Christmas brought me one of these from Aldi:

Horizontal LCD Weather Station

It's for home use but the slim case would look fine, even on a Princess 85. The display is great in a darkish area but the 2 AAs will probably not last that long. It comes with a mains supply which boosts the display brightness so if you can get external 5v to it, on a boat, it would be ace.
The remote sensor could be put into a different cabin or the engine room, to keep an eye on things.

It even takes a time signal from Cumbria so no faffing with the setting. 3 year warranty.
Really very impressive, if it said B & G on the front it would probably cost 350 quid. 8- )

PS. These were in stock before Christmas so probably still on the shelves in some stores.

You can get a 12V DC to 5V DC convertor easily enough via eBay or amazon. The eBay ones are only a few quid, the amazon ones still less than a tenner. They appear to be the same thing "CPT" (though who knows what knock-offs have had the label stuck on them?) - me, I'd pay the extra for an amazon-sourced one, so it's easier to return it if it doesn't work.

I can't speak for that one, but I've had several mono screen jobs from Aldidl over the years and they've done well. The one on the boat keeps within a millibar or two of the Met Office reading over the life of the batteries - several months and is probably seven or eight years old.

If I'd got a posh one at the beginning and it was still working, I'd still have spent a good bit more money than on the Aldidls, and only had one. As it is, I've got one on board and one at home, which is telling me it's cold and wet outside. It got that right.
