Updating of 28 foot yacht - estimated cost ??

I would just use 12 volt lights of the battery and the charger keeps the battery topped up. I knew someone who installed 240 volt lights and rarely used the 12 volt. The 12 volt did not work when needed.
 
I too have a Mirage 28 with some of the upgrades you are considering.
1) Fit battery charging system and 12/240 volt lights throughout the boat. - I wouldn't use 240v on the water, too dangerous particularly with a retro-fitted system. We have a single socket which I use in winter to charge the batteries when in the storage yard.
2) Fit pressurised water system with Calorifier and immersion, fit shower in heads. - We have a calorifier and pressurised water system which is great - specially for SWMBO. we also have hand held shower, shower tray and
pump. Don't bother - the heads compartment is much too small, everything gets wet and in the UK especially Wales doesn't dry out quickly - if ever.
3) Fit anchor windlass - I'm considering fitting a manual one electric would take up too much valuable space in fo'cstle.
4) Respray hull (not necessary but something for the future)- mine has original gel coat which I'm happy with - like someone said earlier if you scratched it you would be gutted.
5) Replace all upholstery - this would make your boat look better and is something I am considering
6) fit fridge (already have a fridge type cupboard but no fittings) - where would you put it? If you use the one under the sink, where are you going to store your tins, packets etc
7) Have stackpack and lazy jacks fitted - we have lazy jacks but no stackpack but I am considering this.

My advice would be to try and find a new boat with the things you require already fitted as retro-fitting will always cost more than you think. I'm very happy with my Mirage
