UK Sailmakers

I think most have some form of seasonal pricing. I think the best prices are generally given at the Soton Show and they will definitely climb after LBS towards the spring. I would start getting quotes sooner rather than later.
 
Surely most of them will do deals, especially if you're willing to have an extended delivery date? More important, I reckon, to choose a sailmaker you can rely on.
 
I use my local sailmaker I can pop down and talk things over, he makes a great cup of coffee and I pay him what he asks. That way I get fantastic service and he gets to feeds his kids.

Some lofts seem to have some spare time on their hands.
End October, I dropped off my genoa for valeting and ordered a new boom/sail cover.
Delivery target: Easter 2017.
Got an e-mail last week: all done and ready for collection.

More important, I reckon, to choose a sailmaker you can rely on.

That's what I do, although I haven't actually had sails made yet, but lots of other stuff. Sailmaker is only a couple of miles away from my winter berth.
