I'm after a 60hp outboard & narrowed it down to either the Tohatsu or Mercury 60hp 4 stroke. The Tohatsu is slightly lighter with 3 cylinders the Mercury has 4 cylinders but similar specs. Estuary & coastal use.
Are there any opinions on which would be better?

Thanks

Tohatsu is 13.5kg lighter, but the Mercury 4-cylinder has a higher displacement.
I'd go with the Mercury if the weight is within limits.

I bought a Mercury 60hp 18 months ago on a new RIB for our sailing club which gets very heavily used, it's been perfect so far with only routine servicing. Then I bought a Suzuki 40hp for the other club RIB as a re engine project which has also been great too. I prefer that I can easily get the full diagnostics kit for the Suzuki for peanuts off eBay, whereas Merc I have to use their VesselView mobile thing that's very limited and expensive in comparison. On my own little Hardy 18 I run a 10 year old Suzuki 50hp (same 3 cylinder block as their 60hp), and that too has been faultless. I don't find any difference in smoothness between the 3 and 4 cylinder engines - if anything the quietest/smoothest is the brand new Suzuki 40hp, that's a beautiful engine on our 4.5m Ribtec!

I would too.

Bigger CC gives more torque so good for holeshot.

I've just done a speed test against a friend with a 150 Mercury 3 litre vs my Honda 150 2.4 litre

The bigger capacity Mercury got a better holeshot than the Honda on almost identical boats.

Although the Honda is "The Power of Dreams" according to their marketing blurb!
