Great workmanship. Especially the teamwork floating the surface filler.
I don't have an issue with a steel hammer (he was using it sideways) I have a hide mallet and a rubber mallet, but sometimes just use a hammer.
Chisels are plastic headed these days. It's more to do with how much force you want to impart.

Just imagine doing all that work and then the new owner rams the dock wall.............

My dear chap please dont tell me about chisels & how a hammer is an acceptable tool for striking them.
