Does anyone know where I can get some of the terminal blocks that Raymarine use for instrument cables - such as in the E85001 Seatalk/NMEA interface box? What are they technically known as?
 
do you mean terminal block? This may be one thing that it is better to get from a chandlery: thaere are zillions of variations, and most are brass or worse, brass plated. You can get them in stainless steel which is not as good a conductor when new, but it doesn't corode.
 
The one I'm referring to has a sprung lever which you push with a screwdriver, you insert the wire and release the lever.
I find with blocks with screws are difficult to use with small diameter instrument cables. Soemtimes the screw doesn't catch the wire correctly or breaks the wires, if I tighten them too much.
 
Screwless...

They're called "screwless" terminal blocks, and are generally made for mounting on a printed circuit board. If you Google for "terminal block" screwless you'll find a number of suppliers.
