I have been recommended to use Sika 295 UV for the deck to cabin joint, needs to be able to adhere to varnish and teak and UV stable.

looking at the Data Sheet, no mention of wood which worries me, but it appears to be widely accepted as the product to use.

Very expensive and costly to get wrong so thought I would check before purchase!

I would recommend deck caulk for this joint. That's how it was done originally and I did the same when I replaced my teak deck 13 years ago.
If you still choose to use another product specifically for this seam, you should check that it is compatible (adhesion) with what ever is used for caulking.

I wouldn't ever consider bonding anything to varnish. You are reliant on the bond of the varnish to the timber to keep the water out of the joint. I'd use/have used deck caulk to bond the teak to the cabin sides, and then varnish afterwards.
