I cannot find out much about the coast of Spain from Cadiz to Gib. What is the sailing/cruising like around here, it looks potentially good and no overdeveloped marinas. Any hints would help on the coastal and even a bus ride inland.

The area 'south' of Cadiz is a military zone & you should not dwell too long - shelling can occur from the shore. Also there are many fishtraps in that area - all the way to Gib, including the Straits.
The only 'marina' is at Barbate - around the corner from Trafalgar. Tarifa is the windsurfing capital of Europe (also v high suicide rate apparently) & 'pilots' for the harbour do not suggest a welcome due to Ferries & fishingboats. You will also find yourself being 'inspected' by high speed patrol boats (especially at night) due to smuggling problem from Morocco.
Cadiz around to Lagos has much better prospects.
