As per the title I am searching for some bits for my rebuild.

I have lost one of the 4 chainplates which seems to have been made from a strip of 316 dimensions 140x25x3mm and I am looking for something to fabricate a replacement from.

In the same vein the bow had a long thin strip of steel (prob not 316) which crumbled away. It's 2500x10x2 ish. This strip obviously protected the bow from small dinks above and below the waterline.

I am having great difficulty sourcing anything that I can work with. Can anybody point me in the right direction?

You will find stainless steel fabricators hidden on many industrial estates. Just google the term for your area. It does not have to be "marine" - what you want is nothing out of the ordinary and any fabricator will cut and drill to size. Make sure you ask for 316.
