I wonder if it’s a problem with the governor or something?
Could explain why the fuelling is off when accelerating or decelerating, but is ok when at constant load.

That's a good shout,

looking at the files for it, I`m not sure what could go wrong but something!

But normally governor issues mean it hunts for revs when under load?

ours has a very smooth delivery

Update,

There is some scoring on the fuel pump so this maybe letting more fuel in that it should

Downdate, parts from Yanmar are on backorder for all the pipework etc.

The Fuel pump guys have said that the pump has failed its test and letting too much fuel through ( scored internals)

So looks like we have found the route of the issues.

However a fuel pump is £1500 and repair £850.

Why is this more for a 2cylinder than is for a V8 automotive!

Of course if it was for a small private plane, it would be another 5x the cost for a simple 4 cylinder engine designed 75 years ago.
