Here's an idea. Get your gunter rigged boat. Remove compression post and get an arch made to replace it. There won't be huge compression from a gunter rig. All it's doing is holding the mast vaguely straight. There's that much twist off above the gaff jaws that there is no point in having a rigid mast and the is absolutely no point (or way) of inducing mast bend.
A nice decorative arch in aluminium (2 plates bonded with blocks between) will create a lovely harem feel to the cabin.

Or, put up two gunter rigs?

I really liked his self-tacking jib. Never really thought much of them before

There was a similar arrangement on the Thames Estuary One Designs way back in the halcyon days before braid and fancy sailcloth - nothing new under the sun eh?
Phil Bolgers Spartina features in his book "Boats With An Open Mind" pages 106 to 110 she is 15' 4" x 7' 0" and is shown with the beautifully simple rig filmed by Dylan and as a cat boat with the mast well forward. Pretty much the perfect single hander I would venture to suggest. Wouldn't you just love to be let loose on the Norfolk Broads or upper Thames?
