Sikaflex

I once saw a post about a guy who used sikaflex 291 as well as bolts to mount an aux o/b bracket , a year or so later when he wanted to move it to the other side of the boat , quite a bit of the gel coat came away with it , made a right mess , so 291 would certainly do the job , so long as you didn't want to move it at a later date ,,,,,,,,:)

which Sikaflex should i use to stick me solar panels to the coach roof?

As said Sikaflex 291 but you'll not be likely to remove it again.

My first solar panel was bolted down and also sealed to the deck with a silicone sealant.

I could not even release it from the Silicone! When it failed and had to be removed I broke it into many pieces in the process.

The new one is only bolted down

For bedding/sealing my new Gebo hatch, I've been told by Seateach to use a polysulphide sealant as it is then removeable (should the need arise) at a later date. Toolstation do one at less than a fiver a tube.
I would have thought that assuming you're using screws and/or a frame to actually position the panels, the same principles would apply?

No Frame or screws.Just a semi-flexible panel direct on the roof.
