I am about to replace my shore cable, I know I need the arctic version but the question is - what size, is 2.5mm OK or should I go for bigger?

All depends on whats going to be running on the boat when using shore power ie: how much current draw from the boat and how long your shore power lead needs to be.
In most instances, unless your planning to run lots of heavy consumers, 2.5mm should be OK.
What are you planning to run?

Battery charger, lights, tube heaters and occasional dehumidifier and kettle I guess. I don't have much hair so a hair dryer won't be aboard.....

Total 3450watts

3450/220=15.6amps (neglecting power factor)

Your pretty much on the safe limit of what 2.5mm cable will safely take (as long as its lenght is under 20 meters)
As long as you can avoid making a cup of tea while checking the battery charger's operation in the midle of a very cold humid winters night....then you should be ok!
