If I were you I would play safe and leave about an inch around the outdrives, that is done on most boats with outdrives.
Last year I had my hull "slurry" blasted and epoxy with five coats but decided not to use coppercoat simply because of the mixed opinions out there, so just epoxy and anti-fouled with a inch gap around the outdrive (not the epoxy) just the antifoul.
