They don't spray crops that we eat with it they treat the land / growing weeds with it before planting the crop. Glyphosate decomposes very quickly on the earth it's a very specific weed killer. Like many things if you ingest it it won't do you any good though.Is there a scientific reason for the increase (if indeed it is an increase?)

You need to do more reading - there's a lot of blether all over the interweb about it being carcinogenic, very little actual evidence of it actually being such, in humans, in reasonable usage scenarios.
