Hi everybody
we are looking to visit you next, coming from France
my Sangria boat is 25 feet and 1m25 deep with BULB KEEL
My question is : how is it at mooring on low tide ?
Is the ground soft or hard ?

You will need to go up the Stour at near high tide - moorings alongside muddy difficult with a fin or bulb I imagine- charge 7 quid a night I believe, a few tatty liveaboards, I think! Ramsgate or Dover a safer bet without bilge keels.
The above is from looking at the quayside - I am open to correction.

My rather old copy of the Shell Channel Pilot says fin keel boats should berth against the wall at the upper end of the quay (i.e. near the bridge), thin mud over chalk. It says there is soft mud at the downstream end of the quay.
There is a lot of detailed advice about getting in there, it is not straightforward!
I occasionally visit by car. The quay is usually quite crowded, apparently with boats that stay there permanently. There is some 'marina' berthing a bit further downstream on the opposite bank to the town quay, so a bit of a walk into town.
 
I happen to be one of the tatty live aboards but further downstream at Sandwich Marina. My boat draws 1.2 m and I find that at low tide when tied up against the quayside wall up towards the bridge I stay afloat. If you can raft up to another boat then you should have no problem. So we think to come next WE ( 1sr - 4th of may)according job possibilities, going first to Ramsgate and further up to weather a.s.o.
