There is a company I used years ago for industrial engines - I think they were called PTO Products or something like that - I'll look it up tonight and post it from home. I don't know about the 120S saildrive, but as long as the flange on your Volvo Penta is a 'standard SAE' size then you should be able to get a housing - but knowing Volvo I bet it's peculiar to Volvo! You may have to make an adaptor plate to suit the housing on your Kubota.
Another point - have you asked BETA? - I thought they offered conversion kits for Volvo Penta Diesels.

have approached the Beta agent who told me Beta will want nothing to do with me because I didn`t purchase any of the items from them.Beta apparently look for serial no.s when ordering replacement parts, then consult their records.
I recently made a beelhousing to adapt my a 110s to a yanmar 3gm. I have the drawings which you can use on the volvo half of the setup. I also had to have a new input shaft made so I could use the existing dampner plate on the yanmar to avoid shaft wear. it has worked great. Although the boat is ued primarily for racing (it's an Evelyn 42) we did over 1,000 miles of deliveries last year with no problems.
