I’m about to fit (or if I run out of time/weather get someone else to fit!) a Raymarine i50 depth in the panel above the hatch alongside an existing i50 log. The electrical connection should be straightforward link between the two although I’m not 100% sure this works in the absence of a full ST spine. But I have to route the transducer wire up there and I can’t see where it might go behind the moulded headlining. It’s a 32 but I think all Sadlers are the same in that respect.
 
Years ago I installed speed depth and wind instruments in our Sadler 29. I ran the cables between the deck moulding and the liner but I had to drill about three 50mm holes in the liner for access. A friend with a lathe turned me some nice teak plugs to cover the holes.
 
That sounds a bit drastic - please understand electrics are a complete mystery to me even after reading a book on the subject. By definition there must be an existing power cable and a transducer from the log instrument running down between the deck and the headlining and the transducer wire must join up with the fore-aft cable run behind the plywood panels on the starboard side. So if, having removed the teak instrument panel, I can poke something stiff but bendy like garden wire down it might work as a mousing line to pull the transducer cable up?

It’s a while since I got into that particular area, but I think you may find it relatively easy to get down from the void between the deck head and the liner to the void between the liner and the vertical bulkhead over the quarter berth - and from there further jiggling should get you to the connection point you desire - if I’ve understood your situation correctly, that is, and apologies if I have not.
