Removing a transducer

They're normally put in with polyurethane sealant and that softens when hot so heat gun is good idea. A heat gun makes easy work of bronze fittings because the metal conducts the heat but I'd expect it still to be a bit useful on a plastic fitting. Will destroy the fitting of course.
 
Assuming that the boat is on the hard and that you don't mind destroying the transducer, I would try grabbing the thing with some tool and turn it on its axle.
If you get it to move, it's practically job done.
