The last time I stripped back and refinished a Saildrive (on a previous boat) was 10 years ago …. What should I be using?

The general concensus on this forum is a two pack epoxy type finish, over an undercoat of either Hammerite Special Metals Primer or one of the spray-on undercoats recommended for spray-on propeller paints.
I have used a two-pack finish meant for Johnson outboard legs, which was provided by my local chandelry, Marine Parts Direct (no connection). It lasted quite well, but got damaged by a net being wrapped round the prop, which caused scratches, allowing water to get in and start corrosion. I had to strip a good bit of it back and repair. Time will tell, as to whether or not this was successful.
