Ok so... I have an E80 which takes CF cards. I then got Norway on an SD card. I put it in a CF adaptor and it doesn't work. Turns out I need the special Raymarine adaptor.

I sail to Norway tomorrow so no time to get a special adaptor sent in.

If I backup the files in my UK Navionics CF card and copy the Norway ones onto it from the SD card, will it work or is there some special jiggers pokers that prevents that?

Navionics claim that trying to copy their SD cards will destroy them. Personally, I've never tried it, but I have spoken to one or two people that appear to have done exactly this - you do it at your peril!

When you say don't exactly this... do you mean they copied it and it work or they copied it and it destroyed it?

I mean that they tried to copy it and it seemed to be damaged afterwards. You can copy the CF card, but SD cards include some intelligence and it is possible for the manufacturer to build copy protection in.

I second the fact that it's unlikely to work. I looked into this a couple of years ago for some not-especially-nefarious purposes (my Navionics Plus account had got confused about what card I had) and while I've forgotten the details I believe there was something about a serial number built into the individual SD card at manufacture, which was used as part of an encryption key for the data. I'm not convinced by the "destroying" idea, at least not permanently, but I don't think you'll be able to read the data if copied to any other card.

Presumably the adaptor passes through the magic serial number somehow.

If it is a modernish SD card (post about 2011) then the card contains a file called the ntag file. This is the digital licensing part. As Pete suggests I am pretty sure this is linked to the serial number of the SD card. It does allow copies to be made of the data but only in specific ways, e.g., onto PC hard drives by, and for use with, software like PC plotter which explicitly works with Navionics. AFAIK the Ntag contains five licences for that sort of thing and I imagine the loading routines in authorized software know how to handle them. If you just try to copy the data yourself, it will know the difference and not work.
