Does anyone recognise the fitting in this picture? I want to release the prop shaft to check the Vetus gland seal but would like to know what the torque settings should be for the clamp bolts, and any advice for working on these parts.

It is not a type I am familiar with but you will see many examples on my website, that should give you some clues. I cannot see well enough in your photo but there are several positive clamping arrangements, such as grub screws, offset bolts through grooves on the shaft, and some rely only on friction. See http://coxengineering.sharepoint.com/Pages/Couplings.aspx Once you know the arrangement we can advise further.
