Position of skin fittings on hull .. does it matter?

I don't have a drain on my galley sink, so I have to carefully lift it out, carry it up the companionway into the cockpit and tip it over the side. Not always successfully I might add.

I have considered fitting a Y fitting into one of my cockpit drains and running a sink drain to that. It would save drilling another hole, but are there any good reasons not to? Water squirting up the drain shouldn't be an issue as I'm thinking of a bayonet or screw bung for the sink.
 
Running any pipe below the water line means anything that floats will not get away and may cause blockage.

This is the prime reason that sinks are plumbed in to flow out above the waterline.

Think what is going to happen to any fats that go down after washing the dishes.

My galley sink is below the waterline. The water is pumped out. There is a seacock. The system has worked well for years.
 
You pump the galley sink water out. That sounds good. What sort of pump please?

The same type as used to pump water in.
