I think very few cruising boats can genuinely tack through 80 degrees except in ideal conditions - whatever their owners, or reviews, might say.

It depends a lot on the wind speed. In light winds the tacking angle is greater because of the affect of apparent wind. And in stronger wind the heavier sea that is often associated with it means that you need to sacrifice a few degrees pointing in order to keep the sails powered up to drive through the waves

Yes, easily if major changes have been made to the boat without a new compass swing and correction.

I removed a gas geyser from the bulkhead for'd of my compass and introduced 15 degrees of deviation, that could give a 30 degree difference between tacks and would account for apparent poor pointing.

But that can easily be noticed by using GPS (spit) COG in a tideless area.
