I too would like to know, I'm been planning a trip to Holland for months :(
We spend near on 6 months in the Netherlands this year , we had no problems no one was interested in us ,
Very welcoming country and everyone helpful .
Only problem is the bikes but luckily there not on the water , well not yet .

do you have an EU passport - or get a Netherlands Visa? Just wondering how you managed the 90 day Schengen rule..?

I'm British with a British passport .
No visa for any EU country
The rules are, your allowed 90/180 days from the day your passport is stamped .
The answer to your question is in the word (stamped)

Since B day we cruisers Italy,Malta, Sardinia, south of France and the Netherlands.
In that time we had two winters in Sicily

Since 2020 we been out of the EU for 7 weeks in all ,
We arrived back in the UK about six weeks ago .

Yes - easy to enter Schengen without getting stamped in, but I was woried that if someone checked and we weren't stamped - we could be fined or arrested etc etc...

Easy to enter without getting passport stamped but it could also lead to refusal of entry next time you go to Schengen, possible fines.
UK Advises Its Citizens to Ensure Their Passports Are Stamped When Travelling to & From the EU - SchengenVisaInfo.com

There have been stories highlighted where people have been refused entry to certain countries because their passports weren't stamped.

Further more November 2023 you will need to complete ETIAS so and this will undergo a detailed security check of each applicant to determine whether they can be allowed to enter any Schengen Zone country. this is going to be electronic checking so when you complete ETIAS and you have a problem with not getting stamped in or out of a country you could be setting yourself up for even more problems.

ETIAS postponed until mid 2024.
