My knob's faded to dull pink

You could try T-Cut to get rid of the faded surface. After that, baby oil is good for putting a shine on knobs. I use it on black instrument surrounds to restore their appearance.
 
My throttle/gear levers have black and red knobs on the end similar to this http://www.asap-supplies.com/marine...-change-control-unit-side-mounted-dual-607402 they look very old and manky. Do you think they would polish up with some T Cut or are replacements available?

We had those on our twin engined liveaboard and one stripped it's thread and came off in my hand too. I found replacements in a local marine surplus store, they were blister packed so a proprietary item and brand new not used. They are available therefore somewhere, IIRC there were different versions some with brass thread inserts, some without. Maybe a search on fleabay will find some? I used all of the ones I bought and they went with the boat when we sold it.

My knobs go faded and dull pink over the winter but after a few weeks in contact with my sweaty palm they seem to shine up again. However, I might try a touch of polish this year to speed up the process. Stop it you lot ... I'm being serious. :)

Red is the most fade prone colour, just look at a red Vauxhall Corsa. It depends what the material is and if the colour is a surface treatment or the material is self-coloured.
If you have a nice red knob, why not make a little slip-on cover to protect it.

Absolutely. Like the front of a modern caravan chassis where the anti-snake device handle and jockey wheel knobs fade. We should all make little covers for our knobs to keep them from direct sunlight whenever possible, and only expose them when absolutely necessary.

I gather those of us with displacement vessels are stuck with knobs that are always the same colour. The MoBo chappies all have knobs that change colour once they get up on the plane. :p
 
My (same) knob came off in my hand in Portree and thanks to my lightening fast reactions I tossed it overboard :-o

On a serious note (obviously) for the price of a diver you can retrieve it from the seabed where the lack of UV light may mean it's still shiny red (with barnacles now probs).
