That sounds like a really good trip you have planned Becky. We did longer watches in the daytime, which allowed you to do other things like washing and cooking. Our skipper did:

0700-1300
1300-1900
1900-2300
2300-0300
0300-0700

The previous watch did the cooking for the following watch who then did the clearing up. How many people will you have on board?

I did one of the Fastnet Challenges several years ago and we had a real blast. After passing the Scillies on our outbound passage the wind never dropped below F8. We didn't actually make it to Fastnet due to gear damage so put into Kinsale for some rest and repairs. The passage back produced even more wind nudging up to F10. The Challenge boats are about the only sort of sailing boat I would want to experience these conditions in.
I did want to do more after this trip, and eventually joined Group 4 on a passage to Cape Town.

For anyone wanting to experience heavy weather in a safe boat, I strongly recommend the Challenge Business.
