Making a ply and GRP freshwater tank.

I have made fuel tanks from epoxy cloth covered ply but now I wish to make a one off freshwater tank in a similar manner but using polyester resin . feasible ?? bearing in mind it's for drinking water .
 
Have you considered using a closed cell foam rather ply?

Much easier to work with, no pre sealing as with ply, good insulation so little or no condensation on the outside, lighter but just as strong.

You can build the whole thing with standard resins but you will need to line the inside with an epoxy food grade resin.

If it's feasible to build a wooden structure (a boat) that keeps the water out it's obviously feasible to build one that keeps the water in.

I would prefer to use epoxy because it bonds well to timber and ply
 
Polyester has limited adhesion to the ply, but will be ok on this count if the glass is strong enough and the ply is just providing a bit of stiffness.
Regarding food grade resins, I would suggest going to the manufacturer's websites, perhaps after getting advice from a good retailer such as CFSnet.
Osmosis can be a problem I believe.
Overcoating polyester, you may need to let it cure a long time or bake it.
It might be cheaper to line the tank with polythene?
Or even thin stainless?
Personally, I'm sniffy about yacht water, even with stainless tanks, I prefer to use bottled water for drinks and cooking, unless the yacht is a full time liveaboard with the water getting changed often.
