Might need to leave the boat for a week or so in Guernsey. What are the options? Would she have to be rafted up in Victoria Marina or can places be found in QE2 or Albert Marinas?

Yes.
I had to leave my boat there at short notice to takes my wife home who had been taken ill. The marina staff could not have been more helpful in finding me a safe berth and keeping an eye on the boat until I was able to return three weeks later.

We had to leave a boat there for a week or so a few years back, and just spoke to the marina staff and were able to leave the boat where we were already berthed. They didn't offer to keep an eye on it, but it came to no harm.
If you're coming back by ferry, beware that the cost if you just turn up on the day is much higher than if booked even a day or so in advance.
