I have spent ages looking for a recessed latch to avoid snagging clothes when passing in any sort of chop.

In the past, I found a Southco one but minimum order was 74!

It needs to be reasonably cosmetically acceptable.

I do not intend to appear to be giving numpty advice, but "when I were a lad" our outside netty had a hole in the door through which one's finger could be poked to access the latch on the inside. The latch could be "locked" by a nail pushed through a hole in the latch and into the wooden door-frame.

Might be a cheap, basic solution for a heads door? :)
If cosmetically acceptably constructed.

Our heads door avoid the problem by having latches at the top and bottom, and a recessed 'sliding door' handle.
The top latch is for general use in port, the bottom one is used additionally on passage.

Is this the sort of thing? Button presses in flush to lock. I can send you one if it's any good.

Thanks for the offer. (I have been away so I sorry if I offended with a late response to your kind offer).

It seems to have a larger back projection (which is not as important as the front one agreed).

"Paddle Lock" seems to be a possible descriptor.
