Is there an art to sharpening

Quality names = quality tools. I always look for something in the 420-440 grade stainless range and use EZE-Lap diamond sharpeners in the medium and fine range, rarely, if ever needing the medium. Also, like any tool, it doesnt pay to abuse it.
