If I fit a wifi/USB interface to my NMEA2000 system will I be able to view the chartplotter screen and radar overlay on the remote screen/tablet/PC?
As AIS comes via NMEA to the chartplotter I have no concerns about seeing that.

Without seeing specifics, i'd say no. Radar isn't usually on the N2K network, modern radar (wired) is Ethernet.

Which does the (Quantum) radar use then? Raymarine's system layout diagrams seem to suggest the radar is just another input into the STNG backbone.
 
99.9% no.
there is no NMEA2000 PGN for radar (couldn't have been!) nor charts.
There are PGNs for GPS coords, where you're going that sort of thing which was also available in NMEA0183.

What you CAN do though is get a plotter that will "broadcast" it's screen state via wifi and then with the right s/w you can repeat the plotter screen (and operate the plotter) from a tablet.
Garmin do it, and I'm pretty sure all the others do it in their recent offerings.

STHS high speed network, but it is ethernet

It uses "Network". Raymarine have called this different things over the years, but it's Ethernet, with various connectors, the latest being called "Raynet"

The es75 should have it's own wifi, in which case you can use this Raymarine app' RayControl Raymarine App for iPhone, iPad and Android | Raymarine

Raymarine also do it and and as it sounds like the OP has Raymarine kit, this may be the option to look at:

As others have stated, radar imaging (with the exception of "wifi" radar) uses ethernet. It's pumping out too much data for NMEA 2000 /STNG. However it's not *strictly* true to say that no radar data is available over NMEA. NMEA 0183 has TLB, TLL and TTM messages for MARPA target tracking and I imagine there's probably a PGN for those.

Folks with a supported Garmin or Navico radar who want to see the overlay in OpenCPN can bridge their network radar image data onto wifi but that is not without its complications:

Raymarine also call their Ethernet network Raynet.
It's the network connector as shown in the middle here..

There's too much data transfer with radar so NMEA2000 wouldn't currently cope. Both Raymarine and Lowrance/Simrad/Navico all use ethernet for radar.

Raymarine either uses Raynet through that network connector or via the direct WiFi connection from MFD to Radome.
Simrad transmits it all in their version of the ethernet cabling although you can also get all the radar data on WiFi either via their WiFi unit or if you're into DIY with a cheap home WiFi router running DDwrt and set to send all multicast over WiFi.

I've just had a brief read of the link from Laika above.. It was a good few years ago that I set up the WiFi from my simrad kit on board. Maybe I was lucky with the local WiFi.

I should add that those complications do *not* apply to people using wifi for screen mirroring apps (which display the radar the MFD is receiving ) or radar which is intended to be used over wifi. It's purely a caveat for things folks *may* encounter when bridging ethernet multicast radar data onto a wifi network.
 
Although back to the original post.

Now that you've mentioned an eS series MFD. As Paul Rainbow says, if all you want to do is to get a similar view to what shows on the plotter rather than get the actual radar data, then enable the MFD built in WiFi and install the Raymarine RayControl App on your tablet.

As already mentioned your es75 has built in wifi screen mirroring via the Raymarine app which will provide what you want. You have to connect the device (usually a tablet) to the network SSID of your plotter. Incidentally you would not be able to simultaneously connect the tablet to another wifi output device.

I have an es75 and it mirrors ok. I have updated it to Lighthouse 3 but don't think that is necessary for the mirroring function.

You are correct, it should work fine with Lighthouse 2
