How much do you want to spend?
Plywood is the basic answer however you may like gold ermine or stainless steel :-)
Plywood comes in a lot of veneers just choose your preference

some decent veneers on ebay...

although if you search for furniture you can pick up some ready made units in the form of sideboards, my interior is mainly mahogany, so for the kitchen i'll be using an old sideboard cut to fit the hull... got drawers and everything.

may be tempted by some of the yew stuff yet.

We have done a lot of internal refit work over the last four winters, our boat is an ex-racer, and while she had everything needed to cross the Atlantic, it was a bit spartan, ie white painted ply and plastic covered cushions.

We rebuilt the galley from a formica (or similar) faced ply, I think it was marine ply. A tip is not to go for pure white, it is too stark. Aluminium sheet from your local DIY place is ideal for lining the cooker area.

The heads compartment was built from ply, some of which was exterior grade bought in the local DIY shop, painted with two part gloss.

A friend veneered the bulkheads, his tip was to use veneer on a very thin ply (something like 2mm) rather than plain veneer, because if too much glue is used it will come through.

We also replaced the commercial flooring with holly & teak stripe, made up headlinings and replaced the side linings and recovered the bunk cushions.
 
Michael Naujok book "Boat Interior Construction"appears to require the use of 6mm marine ply the the underside of the decking, I guess this is to accommodate any leakage. The materials used for the remaining internals the choice is dependant of finish requirements, I believe that there are a nunber of threads that deal with quality of plywoods, my choice would be exterior grade with a pleasing grain?? (Our boat does get a little wet in side!!!!

Some of the internal stuff (eg bulkeads and often settee berths ar part of the boats structure giving lateral or horizontal stiffness - these probably should be marine ply because apart from waterproofing it is substantially stronger and more consistant then WPB

Don't waste your money on marine ply, use a good quality exterior ply. They are both WBP, the only difference is that marine ply has no voids in it. Totally irrelevant to internal joinery. My exterior ply interior is over 20 years old now and good as new. (Well, a bit scratched here and there!)
