Random insurance anecdote:
We'd just gone through the Raz when the skipper exclaims "Bu88er! I forgot about the insurance - where's my phone!":-)

Similar experience with Mardon, now Towergate.

"Yes we would like to extend our cruising area please"

Didn't tell them we were already in Alderney.

I'm with GJW £250 excess for SH sailing been with them for about 15 years. One claim and it was dealt with very well indeed. No loss of NCB.

Been with Yachtmaster Insurance since buying my previous boat in 2003. Told them I would be sailing home from Plymouth to Orkney singlehanded. After an in depth discussion was told that there was no actual restriction on singlehanded sailing but they did not want a claim that could be due to my fatigue. Seemed very sensible but then both broker and self were YM Instructors.

All went well for a couple of years then they changed underwriter and my renewal note said two competent crew at all times. Phone call changed this to singlehanded for passages of a planned duration of no more that 18 hours - which is more or less what I do anyway. Also no increase in excess.

Again all went well until I took out insurance on my new (to me) boat in January this year where they restricted single handing to day light hours only, which is a bit daft for passages around the south of UK where I would want to work tides, and equally daft for midsummer passages around the north of UK as it allows me to stay at sea for about 8 weeks if we take nautical twilight as the limit of daylight!
Anyhow, a phone call got me the 18 hours back, but with the excess doubled.

Is there any real evidence that single handing actually increases insurance claims, or is it just an imagined risk ?

Vote with your feet and tell them why you are changing.

Not IMO. I can't sleep with some 'novice' keeping watch, but I can 'snooze' happily when on my own :o
