I know nothing about paddle boards except the tax to use one on the Norfolk Broads is £42.69 the same as a canoe.

As a "bigger" gentleman myself at 115kg, the choice is a little more complicate than for the lightweights where stiffness isnt tested so much...
I've tried quite a few, and the longer, wider and more volume the better. I'd aim for at least 34" wide and 10ft long.
Higher pressure options are better, go for at least 15psi.
For me a Fanatic Ray touring 13'6" x 35" (pointy nose & faster) and a red paddle Mega 10'8 x 36" (round nose and wider) are equally stable.
