We are currently in Lemmer heading for Amsterdam.
We have the latest Navionic charts and the Ijsselmeer seems to be very flat, but not particularly deep.
The boat have 1.9 draft.

Is the charts to be trusted and what kind of sea bed is there in general?

I made the same trip earlier this year and would say that so long as you keep to the marked channel you will be ok. The only concern would be if a big sea is running when you could well bottom out at the bottom of the troughs. We traveled in a Moody 31 Mk11 with a draft of 1.5 and always had a metre or so under the keel at worst. Good luck.

And outside the marked channels in the lake, where the charts say that the deep is enough? Seems to be big areas where there is 3-4 meters deep.

Deep laden commercial barges regularly use Ijsselmeer. Markermeer is shallower. Don't go off channel or you are likely to run into weed Big weed.

Once through Oranjesluis and into the Ij, you are into much deeper water.

I picked up some weed motoring from the Marken corner south. I more or less freed it by backing off and the rest dropped off at the lock. I don't think there is much around and was probably unlucky. The Ijselmeer as you say is pretty flat. You don't have to follow the barge channels and it is probably better not to. There is a row of small buoys outside the main channel on the way to Amsterdam and there is plenty of water up to them, at least 2m and more like 4 near the channel.

There's always plenty of 'big weed' in the Markenmeer closer in.

When coming from A'dam and turn the corner at Marken to head N to Hoorn we usually get 'bogged down' in the final 3 miles or so.

Only thing to do is stop, go astern and hope the stuff drops off.

There are often big clumps of weed piled on the pontoon at the marina.

Sometimes an unfortunate boat needs a lift out . . .

PS: A rope cutter is quite handy but I reckon a fair bit hangs onto the skeg/rudder

Do not worry too much. We have crossed the Ijsselmeer several times without problems with a draught of 2.1m. Hindeloopen is a regular stop and the approach is very shallow, but we always have half a meter under the keel. I would not do that if there is a big sea running, though. Same with Hoorn, the last 3 miles does not have more than a meter clearance.
You get used to seeing these kinds of depths.

I think it would take a fairly incompetent sailor to end up in Hindeloopen when trying to sail from Lemmer to Amsterdam. Nice place though, and our boat cutlery came from he chandlers there. The only question is; Enkhuisen or Lelystad? We've had good meals at the clubhouse in both places, so it's a toss-up.

Thanks for all the valuable information, yesterday we sailed from Lemmer to Urk. Very flat seabed with few surprises. As you described the sailing in Ijsselmeer. Probably heading for Enkhuizen tomorrow. As a sidenote: We clocked 1700 Nm since we started our trip in Bay of Botnia in July crossing the Ijssel :-)

We called in to Urk this year for the first time for maybe thirty years. It seemed pretty run down compared to the rest of the area, though it has a certain charm. I think that what we most enjoyed was watching the HM going round in his buggy.
