I imagine it's possible but the injector leak would need to pretty significant to stop the engine turning over...and it would leak the whole time the engine is off, not just when you are sailing. If water is getting into the cylinders very little would get past the rings after a few hours and you need a reasonable amount in the oil before you notice it on the dipstick if that's the only check your engineer did. By way of an example, my saildrive oil was clearly emulsified when I drained it recently but it looked absolutely fine on the dipstick. Hopefully it's not water getting into the cylinders but I wouldn't rule it out without further investigation. Your best bet is to extract the oil and take a look as you are planningAbout 10 mm.
I had also wondered about fuel. It’s common rail diesel. Is there any way that fuel in the common rail could get into the cylinder(s) when not running??
