I just found this rather good site which provides animated;full length video with voice over and written instructions on how to tie a vast range of knots.
The animated version allows you to slow down the action and watch the process as the knot ties itself so to speak.
Its well worth a look.
Check out both sailing and climbing section for applicable knots-there are probably more in other sections as well.

The splicing looks interesting. I used to be good at splicing so can now refresh my memory..
