Bernouli's equation - so the same reason aeroplanes fly and sailing boats sail to windward. As a fluid accelerates through a narrow place, or over the outside of a curved surface its pressure drops, in the case of an aeroplane wing generating lift along the horizontal plane, a sail generating a similar effect in the vertical plane, and for a carburettor drawing fuel up from the float bowl and into the air stream on to the cylinders.
It's one thing to understand the theory, quite another to actually see it working and understand what all of the components do! He also has a great video of a 4 stroke engine firing where you can actually see the fire in the cylinder and then the exhaust stroke.
