I have a last question about the little boats (let's say between 18 and 22') ; it seem to me that when you go forward, you put the boat out of balance. What to do without pilot ? Use a "steering line" for helming from the bow, drop the jib AND the main ... ?

Most yachts this size will have larger mainsails than headsails and will be main driven mostly. You will just have to go out and give it a try and find the best method to suit your boat. Its almost a certainty that you normally have weather helm, let the helm go and the boat rounds up into the wind. Going forward onto the foredeck will induce lee helm but if you leave the main cleated in the close hauled position and pull the headsail down quickly by the luff the main will keep the boat nose into the wind. Whether you use a shock cord or just let the tiller free will depend on your boat. Go and try it.
