Grey Teak , Oil or Varnish ?

Well that's rather my point!

OK, define the purpose.

If you have a teak deck "for show", then varnish away. If you actually have to walk about on it, at an angle, changing sails in the wet, then leave natural grey un-varnished and un-oiled, or throw Wessex/Oxalic acid at at regular intervals or just before a show.

Anyone with that much free time is always welcome to come and polish my cleats...

Use the natural. It is similar to the colour of varnish in the tin, and brings out the colour of the teak when out of the tin. Used it last year with great results - only needs a little freshen up this spring (whenever it arrives!)

Ahhh yes , i am a Thames boater so have no need to "work" a boat . May i suggest better shoes and a bit of pride ? Maybe matching jackets for your crew .

Having experience of the Thames in my youth, I believe it can get quite rough, with wave heights exceeding 30mm?

Yes the wash can get that bad ! I have been out in a 75mm wash without a life jacket and it was the season of winter !
