Having looked at the photos again I think the transducer will never work properly there because it is too far forward and there will be bubbles which cause you to loose signal. It needs to be in a position where the water flow is smooth, further aft. This explains why you get signal best when stationary.

The hull photo does not show where transducer is located - its quite close to the keel. But what you wrote, is the reason why transducer was causing troubles - when boat was healing, air bubles might cause problems - it was mounted too far from boat axis..
I asked surveyor who is member of my club for help - this is too serious repair to do without specialist input.
