On 30' masthead Jeanneau I go for the following:

No1 Genoa - up to 10 knots (a sail that I have used twice, I may add)
No2 Genoa - Up to about 16/17 knots, then it becomes a bit Yee-Ha!
No3 Jib (working) - Up to 26/28 knots
Storm Jib - have had this sail up twice too. Once in a flat calm. Then once for real.

All situations where we have to beat. from a beam reach to a run is a different story.
Different horses for different boats IMO

This question is totally unanswerable with the facts you provide. The only way you will get a meaningful answer is by talking to your sailmaker, as the answer is mainly dependant on four factors:
1. Sailcloth weight and manufacture.
2. Boat type.
3. How old are the sails.
4. How much you want to replace them!!!!!
