Checking for leaks on a new installation, the smell emanated from the regulator area. The detergent test showed that the leak was actually at the connection between the regulator and the bottle valve. Should this really be metal to metal or am I missing a seal somewhere?

The system is propane with a left hand thread screw-in attachment.

It is normally metal to metal.
Both surfaces need to be scrupulously clean as small specks of grit may prevent a proper seal. Also I have found that the joint needs to be done up pretty tight.

Like a bullet shaped nose to contact the inside of the bottle thread?

Known as a POL connector . Normally metal to metal but there are versions which incorporate an O ring on the nose of the cone. I think these may be used for hand tightening connectors

Check ... if there is a groove around the nose it should have an O ring
