If a tap is left open will the pump empty the fresh water tank and continue to run, thereby flattening the battery as the pressure operated micro switch will not be tripped?

Yes.

And, once the tank is empty, turning off the tap will not stop the pump because it doesn't pump air well enough to build up the pressure. You then have to turn off the power to it at the panel until you can refill the tank.

And just a reminder as winter is approaching - you cannot drain a calorifier by leaving the hot tap open until air comes out. The air is simply bubbling through the full calorifier. It needs to be drained from the bottom.
