for those who have been taught

Had courses. both theory and practical, though to be fair the practical was a mate and Im not sure who was teaching who.

The 26 weeks of theory, I learnd which way to go round a cardinal buoy, cause we did not have any up our way.

Other than that, not a sausage of usefull information. But loads of stuff you never needed to know.
 
What did you find the most useful things you learnt.
What sort of speed/waves combination a boat can actually withstand.
I don't think anyone would dare jumping waves at 50+ kts, unless previously shown/taught by someone already used to that.

Absolutely - respect.
But I only mentioned high speed (rather than also high seas) for a reason. Imho, you can "grow" into your experience of helming a boat in the rough stuff also without tuition. Possibly more slowly, but it's still feasible.
In contrast, jumping from the crest of one long swell to the next one at very high speed, without having the faintest idea of how to steer/throttle the boat in such conditions, is something I would have never dared to try unless I had the opportunity to approach that with an experienced throttleman first.
