Double the amount of time you think it will take and then triple that. It is the trickiest bit of DIY I have ever done and still at it! Everything is curvy requiring a lot of time consuming planing/scribing/measuring. Making things level with the waterline takes a lot calculating. Oh I could go on and on. I thought it would be easier than the rest of the restoration but it was not. Unless you have an old interior you can use as patterns be prepared for a long haul!
Don't get put off too easily. First thing is to set the hull up plumb and level, then you can use spirit levels and plumb bobs throughout. After that it's not rocket science.
Depends on the level of fit out required. You will certainly be a competent plumber, electrician, laminator, ships carpenter, rigger, engineer, painter and designer by the end ! Helps if you have sisterships whose interior layout you wish to copy, rather than starting from scratch.
Electric kettle and a big box of teabags are pretty essential too .
